Pineapple Coconut Ice Pops

Ingredients

  • 2 cups pineapple chunks
  • 1 (14 oz) can light, unsweetened coconut milk
  • 1 tbsp sorghum syrup, or honey
  • 1 tsp coconut extract
  • 1/4 dash sea salt, optional
  • 1/4 cup shredded coconut, optional

Equipment

  • High Speed Blender
  • Ice Pop Molds (6)

Instructions

  1. In a blender add pineapple chunks, unsweetened coconut milk, sorghum syrup, coconut extract, and sea salt. Blend until smooth.

  2. Stir shredded coconut into the mixture and distribute evenly between the ice pop molds.

  3. Freeze pops until solid, approximately 3 hours. Serve frozen.
