Whisk together Icelandic Provisions Skyr, 2 tablespoons honey and chai tea, set aside.
Add 1/2 teaspoon coconut flakes to the bottom of each popsicle mold. Evenly distribute the skyr mixture into each popsicle mold. Top each popsicle with 1/2 teaspoon of crystallized ginger. Leave 1/4″ of space at the top of each mold to allow for expansion.
Freeze popsicles for 3-4 hours, or until frozen through.
