Israeli Style Salad with Sorghum

  • 3 cups whole grain cooked sorghum 1 cup uncooked sorghum, follow package instructions
  • 2 cups cucumbers diced
  • 2 cups tomatoes diced
  • 1/2 cup red onion diced
  • 1/2 cup basil finely chopped (optional)
  • 2 tbsp mint finely chopped (optional)
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 tbsp lemon juice to taste
  • 1-2 garlic cloves minced
  • 1/4 tsp sea salt
  • dash of black pepper


  1. In a bowl toss the sorghum, cucumbers, tomatoes, onions, basil, and mint together. Set aside.

  2. In a bowl, whisk together the olive oil, red wine vinegar, lemon juice, and garlic.

  3. Pour over the salad and stir.
