But not only does pumpkin add the autumnal flavors that we all crave, but also an abundance of nutritional benefits, too. Pumpkin is a great source of beta-carotene. Including foods rich in the antioxidant beta-carotene, like pumpkin, in our diets can help reduce the risk of developing certain types of cancer and even provide anti-aging properties.

Pumpkin Bread with Raspberry Fruit Spread
- 1/3 cup avocado oil, or melted coconut oil
- 1/2 cup + 2 tablespoons maple syrup
- 2 eggs
- 1/4 cup water, or milk of choice
- 3/4 cup pumpkin puree
- 1 teaspoon vanilla extract
- 1¾ cup whole wheat flour, or gluten-free flour blend
- 1 teaspoon cinnamon
- 1/4 teaspoon ginger
- 1/4 teaspoon cloves
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon sea salt
- 1 tablespoon coconut sugar, or granulated sugar
- 1/4 teaspoon cinnamon
Preheat oven to 350°F. Lightly grease one 9x5 inch loaf pan.
In a large bowl bowl add the oil, maple syrup and beat with a whisk or use the whisk attachment of an electric mixer. Add eggs, mix until well combined. Add pumpkin puree, milk or water, vanilla extract, baking soda, baking powder, cinnamon, ginger and cloves and blend well. Add flour into the pumpkin mixture and fold with a rubber spatula or large spoon until well combined and smooth.
Pour batter into loaf pan and sprinkle with cinnamon and sugar on top of the pumpkin batter. Bake for 50-55 minutes until knife comes out clean. Slice and top with your favorite World of Chia flavor.
