Nutrient Booster: Cannellini Beans
We love Cannellini beans for so many reasons. They’re versatile, protein-packed and delicious…just to name a few! Cannellini beans actually fall under the legume category. Legumes are chock full of fiber, protein, B vitamins, iron, magnesium and so much more. Legumes are also naturally low in fat and are free of cholesterol! Diets rich in legumes have been shown to lower the risk for type 2 diabetes! We love using Cannellini beans in so many different recipes, but this dip might be our favorite!

Cannellini Bean Dip
- 1 tablespoon olive oil
- 1/2 cup onion, finely chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can cannellini beans
- 1/2 teaspoon salt
- 1-3 teaspoons lemon juice
Place a saute pan over medium heat. Add olive oil and onion, saute for 4-5 minutes, and add garlic until it begins to lightly brown. Add the cannellini beans and mix together for 2 minutes. Remove from the heat.
In a food processor or high-speed blender, puree the beans, garlic, onions, salt, and lemon juice. Blend on high or process for about 2 minutes, until creamy.
