What’s better than firing up the grill, cooking some amazing food, and sharing it with friends and family? We’re not too sure, which is why we love making this simple grilled chicken recipe to serve with salads, appetizers, and even on it’s own. One thing that we love about this dish is how versatile it is–just make a big batch, store it in a sealed container, and you can pair it with almost anything you like. Not only is this recipe delicious, but it’s also packed full of nutrition! Eating lean poultry such as chicken provides you with a great source of protein, B vitamins (niacin, thiamin, riboflavin, and B6), vitamin E, iron, zinc, and magnesium. Proteins function as building blocks for bones, muscles, cartilage, skin, and blood, and are also building blocks for enzymes, hormones, and vitamins (1), so it’s important to make sure you are getting enough of it in your diet! A good way to calculate the amount of protein you need is to convert your weight to kilograms (weight in pounds divided by 2.2 g/kg) and multiply that number by 0.8 g/kg. Serves: 4 servings
  • 1 teaspoon avocado oil, coconut oil or olive oil
  • 1 teaspoon garlic powder
  • ¼ teaspoon sea salt
  • ¼ teaspoon ground pepper
  • ¼-1/2 teaspoon mustard powder
  • 1lb chicken breast tenders
  • 1½ teaspoon lemon juice
  1. Heat a barbecue grill or grill pan over medium high heat.
  2. Add 1 teaspoon oil to either a grill pan or grill grates.
  3. In a small dish add garlic powder, sea salt, ground pepper, mustard powder and mix together.
  4. On a plate, sprinkle both sides of the chicken with lemon juice, then coat each side of the chicken with the seasoning mixture in the previous step.
  5. Grill chicken for 5 minutes on each side until golden brown, or until chicken has reached an internal temperature of 165 F.
Serve with your favorite BBQ sauce, Sriracha sauce, or over salad with dressing.
