Breakfast Wrap

Make ahead on the weekend for quick breakfast during the week.


8 eggs

non-stick spray

1 cup red peppers, diced

1/4 teaspoon salt

black pepper to taste

4 whole wheat wraps 9 inch

1 cup Monterey Jack cheese


Beat eggs in a bowl.  Heat large skillet and spray with non-stick spray.  Add eggs, red pepper, salt and pepper.  Scramble eggs until cooked through.  Divide eggs in fourths and add in the center of wrap.  Add a 1/4 cup of cheese to each wrap.  Fold wraps and cover with plastic wrap.  Place all in a freezer bag and store in freezer.  When ready to eat, unwrap breakfast wrap, place on microwave save dish.  Cover with a paper towel and heat for 90 seconds to 2 minutes at 50% power until heated through.
